Pangasius is a freshwater fish of the Pangasiidae family, called "shark catfish" due to its characteristic body shape and sharp, "shark" fin. The habitat of pangasius is the rivers and reservoirs of East Asia (Vietnam, Cambodia, Thailand, Laos). The largest population of pangasius is found in the Chao Phrai and Mekong rivers.

Pangasius is a predatory bottom fish that preys on crustaceans, molluscs, small and fairly large fish. It has a dark gray body color on top, gradually turning to light gray on the sides and belly. Pangasius fins are black or dark gray. It can reach 1.3 m in length and weigh more than 44 kg, however, the size of an average individual suitable for commercial use usually does not exceed 1-1.5 kg.

There are two types of pangasius:

  • Pangasius hypophthalmus or Siamese pangasius;
  • Pangasius bocourti or Pangasius Bocourt.

The main supplier of pangasius is Vietnam: this country grows and exports up to 90% of the shark catfish produced worldwide. The turnover from Vietnamese specialized fish farms is about 1 million tons of pangasius annually. Mainly only vacuum-packed pangasius fillets are supplied to Russia and Ukraine.

Fillet of pangasius is prepared by hand in Vietnamese factories: bones, skin and fat are removed from the carcass (trimming), after which it is frozen and packed. To protect the product from chapping, the pangasius fillet is covered with a thin crust of ice. This procedure is called glazing. On the Russian and Ukrainian markets, pangasius is often presented as a maritime language, however, in reality, these are two completely different products.

Useful properties of pangasius

Pangasius grown in ecologically clean conditions is a product useful for human health. The composition of its meat includes vitamins of group B, vitamins PP, A, E, C. The number of macroelements present in pangasius fillets include calcium, potassium, sulfur, phosphorus, magnesium, sodium; microelements - zinc, iron, chromium, fluorine and some others.

Compared to other freshwater fish, pangasius is high in omega-3 fatty acids and proteins. The benefits of pangasius, due to the composition of its components, is especially great for people suffering from diseases of the cardiovascular system, gastrointestinal tract and musculoskeletal system.

Calorie content of pangasius

Despite the fact that this fish belongs to the fatty category, the calorie content of pangasius is low - it is only 89 kcal / 100 grams of edible part. This allows pangasius to be classified as a dietary product.

  • Protein - 15 g (67%);
  • Fat - 3 g; (thirty%);

Pangasius in cooking

Pangasius fillet is used for preparing first and second courses, salads, appetizers, casseroles, soufflés, pie fillings, etc. The methods of cooking pangasius are limited only by the imagination of the hostess: it can be fried, boiled, baked.

It is recommended to defrost pangasius fillets naturally, without hot water and a microwave oven, to the extent that the fillets can be easily cut with a knife. Further defrosting of the fish will take place already in a frying pan or in a saucepan: this way the pangasius will be able to preserve the maximum amount of nutrients.

Nowadays there is a lot of talk about the fact that pangasius is bad for consumption. In fact, fish grown artificially in Vietnamese fish farms can pose a health hazard.

First of all, due to the fact that the Mekong River, which serves as the main habitat of the pangasius, is located in a densely populated area of the country and cannot boast of cleanliness: both industrial waste and sewage flows into the reservoir. In addition, chemical additives can be used to accelerate the growth of fish in some industries.

It is definitely impossible to say that pangasius is harmful to health - the quality of fish fillets may turn out to be unsatisfactory only through the fault of the manufacturer. In cases of using pangasius living in an ecologically clean environment, its benefits are obvious.
