For cooking grass carp, it is better to take a large fish, since bones are easily removed from it.
You can cook fish, cut into pieces, or whole. Fatter pieces can be fried, and drier ones, those closer to the tail, are best stewed with fried onions and carrots, lemon and black pepper: bring the fish to a boil, then reduce the heat and simmer for about half an hour or an hour.
