Catfish (European or common) is a large fish belonging to the catfish family. Bottom areas of fresh water bodies become habitats. Most often, catfish is colored brown, the shades of which can vary up to brownish-green. In addition, the color of the catfish differs in different places of its habitat: the fish can be either black or light yellow. There are also albino catfish, a very rare color variety of fish.
The main food of the catfish is crustaceans, fry and aquatic insects. A more mature individual feeds on live fish, molluscs, other freshwater, rarely waterfowl and domestic animals. However, fish and carrion do not disdain.
The life span of fish rarely exceeds 35 years, although long-livers are known, whose age was estimated at tens of years.

A fresh catfish carcass, in addition to its taste and energy qualities, has excellent properties that any housewife will appreciate: the skin of the fish is easily freed from the scales, and there are practically no bones in the meat. Of course, this kind of fish can be cooked in a matter of minutes. To do this, it is enough to carefully detach the head and fins of the fish from the body, and gut the abdomen, after which it remains only to cut the catfish into pieces.
The smell of mud, which often accompanies catfish and becomes the reason for refusing to eat it, can be easily eliminated by keeping the fillet in lemon juice for half an hour, or in milk for several hours.
Another useful feature of fish is that the calorie content of prepared dishes based on it can be varied. The fat content in a fish carcass is uneven: for example, the tail contains more calories, more nutritious, juicy and fatty than the head area. That is why the tail is recommended to be used for making balyk, pies with catfish. The head part of the fish is suitable for cooking rich fish soup, and from the rest of the carcass, cutlets, goulash, kebabs and other dishes are very tasty. The calorie content of dishes with catfish differs depending on the chosen cooking method: those who monitor the consumption of fats and calories are advised to steam the fish, bake it without oil, or boil it.
