Japanese cuisine is very popular, and every year it wins more and more fans around the world. Gourmets recognize its main delicacies as sushi and rolls. These dishes have already become traditional for domestic cafes and restaurants, and although the Japanese claim that real sushi and rolls are prepared exclusively from freshly caught fish and seafood, in the domestic version of these dishes, mainly freshly frozen products are used. It is difficult to say how things are in Japan, but we have rolls and sushi poisoning not uncommon - so much so that some people are even afraid to try them.

How is the poisoning with rolls and sushi?

The main ingredients of rolls and sushi are rice, fish and various seafood, moreover fish and seafood that are not heat-treated.

Raw fish can be infected with salmonella and parasitic worm larvae. To reduce their ability to cause poisoning, the fish must go through a complex processing process (deep freezing, soaking in special sauces). Any violation of technology at this stage can cause food poisoning or helminthic infestation.

Rice can be another cause of poisoning. If it is boiled in advance, and even stored in improper conditions, then pathogenic microorganisms, primarily staphylococci, Escherichia coli, streptococci, can get into it. Microbes entering the gastrointestinal tract along with improperly prepared delicacies of Japanese cuisine actively multiply. Moreover, in the process of vital activity, they release toxic substances that cause inflammation of the mucous membrane of the stomach and intestines.

Poisoning with rolls and sushi can be caused by a high concentration of heavy metal salts in fish tissues. The fact is that in many areas of the World Ocean the ecological situation is unfavorable. Fish caught there often turn out to be literally soaked in mercury or lead. That is why doctors do not recommend often feasting on rolls and sushi, even if they are prepared from fresh products without breaking technology.

Poisoning symptoms

Eating rolls or sushi infected with pathogenic intestinal bacteria leads to the development of foodborne disease. A few hours after eating low-quality dishes, the patient develops an unpleasant heaviness in the abdomen, nausea. Then these symptoms are added:

  • vomiting;
  • abdominal pain of a spastic, cramping character;
  • diarrhea;
  • increased body temperature.

If seafood with a high content of heavy metal salts was used in the preparation of rolls or sushi, then a serious disorder occurs, the first symptoms of which are:

  • sharp pain in the abdomen;
  • diarrhea or constipation, and often their alternation;
  • flatulence;
  • violation of nervous sensitivity;
  • metallic taste in the mouth.

In the future, signs of functional damage to the liver, kidneys and other internal organs join them.

First aid for poisoning with rolls and sushi

The appearance of the first signs of discomfort that occurs a few hours later from eating sushi or rolls is the basis for urgent measures aimed at removing toxic products from the body.

First of all, you need to flush the stomach. The patient is given a few glasses of warm water or a pale pink solution of potassium permanganate to drink. Then the fingers produce pressing movements on the root of the tongue, which causes an attack of vomiting. Repeat gastric lavage several times to completely remove food debris from the stomach.

Medicines with a sorbing effect help neutralize toxic substances that have already penetrated into the small intestine. These include:

  • Activated carbon;
  • Smecta;
  • Enterosgel;
  • Polysorb MP;
  • Filtrum STI.

To reduce the symptoms of intoxication and prevent dehydration, the patient should be given plenty of water. You need to drink often and in small portions. For oral rehydration, you can use Rehydron solution or rehydration salt.

When is medical attention required?

In most cases, the symptoms of poisoning with rolls and dry land pass quickly and patients do not seek medical help. But sometimes doctors cannot do without help. These situations include:

  • poisoning in children, the elderly, or pregnant women;
  • symptoms of poisoning do not subside within two days;
  • excessively intense abdominal pain;
  • decreased daily urine output;
  • dark urine;
  • the appearance in the feces of an impurity of blood and / or a significant amount of mucus;
  • lowering blood pressure.

After the examination and instrumental laboratory research, the doctor prescribes treatment. If it was caused by pathogenic microflora, then antibiotic therapy is indicated. In case of poisoning with heavy metals, specific antidotes are administered.

For any type of poisoning, detoxification treatment is carried out, including the intravenous administration of saline solutions, glucose with ascorbic acid.

Possible consequences

With proper treatment, poisoning with rolls and sushi passes without any long-term consequences. Unstable stools may persist for some time, which is associated with residual inflammation in the intestinal walls. Therefore, during the period of convalescence, patients are advised to adhere to dietary nutrition.

Late initiation of treatment for poisoning with salts of heavy metals can cause the development of renal or hepatic failure.

Prevention

Considering that the process of making rolls and sushi is quite complicated, it is best to enjoy these dishes exclusively in specialized restaurants. It is hardly possible to cook delicious and, most importantly, safe rolls at home for the following reasons:

  • seafood must first be subjected to rapid and very deep freezing, which has a detrimental effect on pathogenic microorganisms and parasite eggs;
  • in the process of cooking, pieces of raw fish are kept in several sauces with antibacterial effects.

If, nevertheless, the rolls are prepared at home, then you should use exclusively sea fish, since it is less often infected with parasite eggs.
