Eggplant diet dish: raw caviar
For 1 kg of eggplant you need 0.5 kg of bell pepper, 0.5 kg of fresh tomatoes, 2-3 medium-sized onions, a head of medium-sized garlic, fresh herbs (dill, parsley), 2-3 tables. tablespoons of vegetable oil, ground pepper, salt to taste. Bake eggplants and peppers in the oven or in a heavy-bottomed pan under a lid without adding oil, cool, drain, peel and seeds, chop finely. Scald the tomatoes with boiling water, remove the peel, finely chop. Chop onions, garlic, herbs, you can in a blender. Mix everything, let it settle, drain the liquid, fill with vegetable oil, pepper, add a little salt.
In the eggplants prepared in this way, the calorie content is 40-45 kcal per 100 g of product, and all nutrients are preserved as much as possible.
