Hops-suneli seasoning
Each well-known spice is associated with a specific country. Hmeli-suneli seasoning is rightfully considered the property of Georgian cuisine. The aromatic mixture of greenish tint is a powder of dried herbs and spices. The name of the seasoning is translated from the Georgian language and means nothing more than "dry herbs". The combination of ingredients of the hops-suneli mixture, the composition of which gives the dishes a delicate aromatic aroma and a somewhat piquant aftertaste, was chosen very well.
Despite the fact that different food requires an individual approach in the choice of spices, khmeli-suneli is ideally combined with any product. First of all, such an additive is irreplaceable in traditional Georgian dishes - kharcho, satsivi. A spicy mixture of khmeli-suneli is part of such a national snack as adjika. The aroma of dry herbs gives a special taste to meat, fish, and poultry dishes. The powder is also added to various vegetable dishes, soups, marinades.
The versatility of the hop-suneli seasoning is explained by a fairly large set of spices that complement and enhance each other's aroma.
Hmeli-suneli - composition
All spices of khmeli-suneli - a traditional Caucasian seasoning - have a peculiar taste. Each of them brings its own note of aroma to the "common piggy bank", this combination gives a zest to any dish. Hmeli-suneli, the composition of which is a wonderful set of herbs, can be recognized by its greenish tint and unique smell.
The spice mixture consists of 13 ingredients, 11 of which are taken in equal parts, and 2 - as a percentage of the total mass.
Hops-suneli spice is a combination of the following herbs:
- Basil. Has a pleasant smell of allspice, depending on the variety, it has anise, menthol, lemon or mint aromas;
- Coriander. It has a peculiar spicy taste with hints of lemon;
- Bay leaf. The smell of this spice is familiar to everyone;
- Celery. Differs in a very sharp persistent aroma;
- Marjoram. Known for its bittersweet spicy taste reminiscent of cardamom;
- Hyssop. Adds camphor-spicy shade of smell to the hops-suneli spices;
- Parsley. Its pleasant aroma is due to the presence of essential oils;
- Mint. Has a refreshing taste;
- Dill. It is widely appreciated for its persistent spicy aroma;
- Fenugreek (Shambhala, Fenugreek). Contains a substance called coumarin, due to which it resembles the smell of condiments such as curry;
- Garden savory. Has a very fragrant green, which is close in taste to hot pepper;
- Hot red pepper. Its name speaks for itself, it adds spice to the spices of hop-suneli;
- Saffron. It has an intoxicating aroma with a bittersweet taste.
The last two ingredients are used in limited quantities in the hops-suneli seasoning. Pepper makes up only 2% of the total mass of the prepared spice mixture, which is due to its too spicy taste. The share of saffron among the hops-suneli spices does not exceed 0.1%. Such a small amount of spice is due to its high cost, which is explained by the laboriousness of production and a huge number of useful properties.
In hop-suneli seasoning, the composition of herbs can sometimes be incomplete. In this case, the mixture consists of basil, marjoram, dill and coriander, hot peppers and saffron are also included, their percentage remains unchanged. Spicy herbs, in addition to flavoring dishes, can also have a healing effect on the human body.
Useful properties of hops-suneli
All hops-suneli spices differ not only in a special aroma, but also in a beneficial effect on the human body. They contain a large amount of valuable nutrients. These are vitamins, mineral salts, essential oils. Each ingredient has a specific set of chemicals, and their combination makes the seasoning universal. The healing effect of khmeli-suneli is due to the beneficial properties of the herbs included in the seasoning. Some of their properties:
- Basil. Has anti-inflammatory effect, relieves stomach pain;
- Coriander. Has a laxative and choleretic effect;
- Bay leaf. Increases immunity, in combination with other ingredients of hops-suneli soothes the nervous system;
- Celery. Strengthens metabolism, restores the nervous and endocrine systems;
- Marjoram. It is used for diseases of the respiratory tract and digestive organs;
- Hyssop. Helps with disorders in the stomach, as well as anemia;
- Parsley. Improves digestion, is used as a diuretic for cardiac edema;
- Mint. Expands blood vessels, has a calming effect, softens the taste of hops-suneli;
- Dill. It is a diuretic, laxative, expectorant;
- Fenugreek. Stimulates appetite, stimulates lactation in lactating women, increases male potency;
- Savory. Has bactericidal properties, is used as an analgesic and fixative for diseases of the gastrointestinal tract;
- Hot red pepper. Stimulates appetite and improves digestion;
- Saffron. It has numerous medicinal properties and is a powerful antioxidant.
